Nikkei is the Japanese word for emigrants and their descendants, but somewhere along the way, “Nikkei” began to refer to the food that grew out of the Japanese diaspora in Peru.
But the origins of the culinary mash-up dates back over 100 years. Japanese farmers began emigrating to Peru in 1899, and their descendants informally created Nikkei cuisine, altering Japanese dishes to use local Peruvian ingredients, creating dishes that married the simplicity and precision of Japanese culinary techniques.
The combination of Japanese and Peruvian cuisine has become the latest gastronomic sensation to hit the global culinary capitals.
